Nutritional Pathways: Wellness Journeys

Problem:

Vicki suffers from constant low energy, sore muscles, and severe headache. Her diet history reveals very low intake of water, high intake of fat free high carbohydrates, and very little protein. She also states that she shuns fat. Most of her days are spent in bed, and she does not work any more. She is unhappy with her weight of 250 pounds.

Discussion:

Our water intake is very important for the functioning of all our organ systems, muscles, and nerves. Dehydration (not enough water) can cause very low energy, and poor mental concentration. The constant bombardment of carbohydrates to the metabolism results in very high to very low blood sugar concentrations. These extremes in blood sugars sap the muscles, brain, and nerves of vital nutrients normally obtained from protein and fat. Chronic fatigue corresponds to the diet and water intake. Headache is a feature of this complex due to the dilation and restriction to blood vessels handling high volumes of blood sugar.

Plan:

Water intake will be increased to 96 ounces a day. Multivitamins and calcium will be added to the diet. The carbohydrate intake will be decreased from its current intake of 500 grams a day to no more than 50 grams a day. Liberal amounts of protein will be added to the plan, as will be a modest fat intake. As soon as she is able she will begin a modest walking program in her neighborhood.

Follow up:

Vicki has been implementing her plan for the last 30 days. She is pleased to report that her headaches, muscle pain, and low energy are gone. The water intake and vitamins were a little harder to start, but now she enjoys the water wondering how she lived with out it. Her weight has dropped by 24 pounds, and she is much more active. Her positive change has given her the ability to care for her family.
